This week: Mundi's bewitching black bean burgers.

From February 18th until April 4th, people all over Antwerp will indulge themselves only in soulfood without souls (please check: www.dagenzondervlees.be). dwars gladly encourages this endeavor with a recipe for incredibly tasty burgers, which will continue to bewitch even the most notorious meat-enthusiasts into preferring them over their beefy brothers. How? Very simple, very cheap.

 

For 4 servings, you will need:

  • 1 can of black beans (or kidney beans if you must)
  • 1 red pepper
  • 1 medium-sized red onion
  • 6 table spoons of flour
  • 6 table spoons of breadcrumbs
  • 4 buns
  • 1 big tomato
  • 4 pickles
  • Ketchup, mayonaise, barbecuesauce
  • Salt & pepper
  • Butter, olive or sunflower oil

 

Let's get these babies baking, then. Take the beans out of the can and wash them in a colander to remove all of the bean juice. Next, put them in a large bowl or pot and use a fork or hand blender to mash them. In order to make your burgers look as hand-crafted as possible, leave some of the beans intact. Chop half of the raw red onion finely. Add it to your bean mash. Do the same for your red pepper, but add it in whole. Give it some flavour by adding salt and pepper as desired. Add nearly all of the flour and 3 table spoons of oil to the mixture. Mix it all up. Your mixture should be quite firm now, like cookie dough. If it is not firm enough, add some more flour or some breadcrumbs.

 

Now spread breadcrumbs on a plate. Rub the rest of the flour on your hands and roll your burger dough into 4 equally-sized balls. Carefully flatten these balls with your hands and shape them into burgers. Cover all sides of the burgers in breadcrumbs, make sure the borders are also covered. Cut 4 buns in half and lay them out on 4 plates. Heat up some oil in a pan and bake the burgers until they look appropriately brown. After that, put the burgers on the buns. Decorate with tomato and raw slices of onion and pickle. Finally, add sauce at your heart's content or discontent, yikes!

 

You can serve your burgers with a side dish of salad. A nice carrot or chicory salad will go down well, or some nicely done patatoes or fries if you feel like greasing it up a little. Or just have two burgers. Or serve them beside a nice broccoli soup. Or add some lovely fried mushrooms with butter and garlic as topping, or make them into cheeseburgers. Or get cheeky with it and do a nice chick pea spin-off with feta cheese and tajine herbs. Or gently dip them in honey and cover them in colourful violet petals, why the f*ck not? Enjoy!
